Una delle leggende più note risale al tempo del re longobardo Alboino (VI secolo). Si racconta che, durante l’assedio di Pavia, una giovane offrì al sovrano un dolce a forma di colomba come simbolo di pace. Il gesto colpì così tanto Albonio da spingerlo a risparmiare la città.

Un’altra storia collega la colomba a San Colombano, monaco irlandese che nel VII secolo si trovava alla corte della regina Teodolinda. Durante un banchetto quaresimale, rifiutò la carne trasformandola miracolosamente in candide colombe di pane, rendendole così adatte al periodo di digiuno.

Nonostante le antiche narrazioni, la colomba pasquale come la conosciamo oggi è relativamente recente. La sua diffusione avviene negli anni ’30 del Novecento grazie all’azienda Motta.

L’idea fu di unire la tradizione pasquale a una strategia industriale intelligente: utilizzare gli stessi macchinari impiegati per produrre il panettone natalizio per creare un dolce simile anche per Pasqua. Nacque così la colomba, con un impasto soffice arricchito da canditi e ricoperto da una glassa croccante di mandorle e zucchero.

Questa intuizione trasformò rapidamente la colomba in un prodotto simbolo, diffuso in tutta Italia e poi anche all’estero.
